Bacon Jalapeño Popper Quesadilla! 🥓🫑

Ingredients

1 large flour tortilla (burrito size) 🌯

2 strips bacon 🥓

1 jalapeño pepper, seeded and diced 🌶️

2 oz (¼ block) cream cheese, room temperature

¼ cup mozzarella cheese, shredded 🧀

¼ cup Monterey Jack cheese, shredded 🧀

1 tbsp Lola’s Hot Sauce 🔥
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp kosher salt
-
¼ tsp black pepper
Instructions

Cook the Bacon
Heat a large skillet over medium-high heat. Add bacon and cook until almost crispy. -
Mix the Filling
In a small bowl, combine cream cheese, mozzarella, Monterey Jack, garlic powder, onion powder, salt, and pepper. Set aside. -
Add Jalapeños
In the last 2–3 minutes of cooking the bacon, add diced jalapeños to the skillet. Cook until softened. -
Combine the Mix
Remove bacon and jalapeños from the skillet. Drain bacon on a paper towel, then chop into pieces. Stir bacon, jalapeños, and Lola’s Hot Sauce into the cream cheese mixture. -
Assemble the Quesadilla
Return skillet to medium heat (no need to wipe clean). Place tortilla in skillet and spread the filling evenly over half. Fold tortilla in half. -
Cook & Crisp
Cook 2–3 minutes per side until golden brown and melty. -
Serve Hot
Slice into wedges and enjoy immediately! 🌶️🧀🔥
